Winter Seasonal (Update: Antifreeze) Brewday

This past weekend we brewed the first two batches of this year’s yet-to-be (re)named winter seasonal offering Antifreeze.
Aiming to create a full-bodied brown ale with a substantial and sweet malty backbone, with clear reference to some of our favorite Old Ales, DJ’s recipe starts with an ample portion of Baird Maris Otter Malt and is enriched with Crystal, Cara Vienna and Chocolate Malts.   
Three additions of US Golding Hops provide about 30 IBUs of balancing bitterness.  Subtle floral hop flavors should be evident while the beer is still young.  With an original gravity around 1.070 (17° Plato), the beer should finish up above 7% ABV.
Over time as the beer ages, estery characters – dark fruits, yellow raisins, sherry - should begin to emerge.
